If you’d asked us before this trip to name our favorite destination out of everywhere we’ve traveled, we would have hesitated. Not anymore. Ireland — and specifically Ashford Castle — is now the answer, full stop.
Here’s how it went, from the buzz of Dublin to the fairytale grounds of one of the most beautiful estates we’ve ever set foot on.
Dublin: The College Green Hotel
We kicked things off in the heart of Dublin at the College Green Hotel, and it was the perfect home base for diving into the city. Housed in a beautifully restored historic bank building, the hotel strikes that rare balance of feeling grand without losing any warmth — a lot of character in every hallway and common space.
Location-wise, you can’t do much better. We were steps from Trinity College, Grafton Street, and the general chaos and charm of Dublin’s city center, which made walking everywhere effortless.
We packed in all the essential Dublin experiences — wandering Trinity College and gawking at the famous Long Room library, getting lost in the winding streets of Temple Bar, stopping into The Brazen Head (Ireland’s oldest pub) for a proper pint of Guinness, and touring the sobering but fascinating Kilmainham Gaol, one of the most powerful history lessons in the city.
Dublin was a fantastic start — the kind of city that rewards you for just walking without much of a plan.
Ashford Castle: The Best Trip of Our Lives
We’re not exaggerating when we say Ashford Castle is, hands down, our favorite travel experience to date. We stayed at Ashford Lodge, right on the castle’s sprawling estate in County Mayo, and every single day there felt like stepping into a different world.
Getting around the estate often meant riding in one of the property’s beautifully kept vintage Land Rover Defenders — just one more small detail that made the whole stay feel like its own experience.
Walking with Irish Wolfhounds
One of the most memorable mornings of the entire trip was walking the estate’s resident Irish Wolfhounds. These gentle giants are practically royalty on the property, and getting to walk alongside them through the grounds was equal parts surreal and adorable.
Falconry on the Estate
Ashford Castle is home to Ireland’s oldest falconry school, and it did not disappoint. Getting a hawk to land directly on your glove, out in the open fields of the estate, is one of those experiences that’s hard to describe until you’ve done it yourself — equal parts thrilling and humbling.
Archery and Clay Pigeon Shooting
We also tried our hand at archery and clay pigeon shooting on the grounds, both run with fantastic instructors who made total beginners feel comfortable while still delivering a genuinely fun, slightly competitive afternoon.
A Boat Cruise to St. Patrick’s Wayfarer
One of the most special parts of our stay was a boat cruise across Lough Corrib, with a stop on a small island where the Wayfarer of St. Patrick is buried. Standing on that quiet island, with centuries of history under your feet and nothing but water and green hills in every direction, was a genuinely moving moment in the middle of what was otherwise a very active, adventure-packed trip.
Dinner at the Dungeon
To cap off the magic, we had dinner at The Dungeon — Ashford Castle’s atmospheric, candlelit dining experience set in the castle’s original stone dungeon. It’s exactly as dramatic and memorable as it sounds, and easily one of the most unique dinner settings we’ve ever experienced anywhere in the world.
Why Ashford Castle Wins
Between the falconry, the wolfhounds, the archery, the boat cruise, and dinner in an actual dungeon, Ashford Castle wasn’t just a hotel stay — it was a full, immersive experience unlike anywhere else we’ve been. The estate itself is staggeringly beautiful, the activities are genuinely once-in-a-lifetime, and the whole thing came together into what we can only describe as our best trip yet.

Final Thoughts
Dublin gave us the perfect taste of Irish city life, but Ashford Castle is what will stay with us forever. Between the wolfhounds, the falconry, the island burial site, and dinner in a literal dungeon, it’s hard to imagine topping this one anytime soon.
